Keto ricotta pancakes

Ingredients:

  • 1 cup ricotta cheese
  • 4 eggs
  • 1/4 cup almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Sweetener of your choice (stevia, erythritol, monk fruit, etc.) to taste
  • Butter or oil for cooking

Instructions:

  1. In a mixing bowl, combine the ricotta cheese, eggs, almond flour, baking powder, vanilla extract, and sweetener. Mix until well combined and smooth.
  2. Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.
  3. Pour the pancake batter onto the skillet, using about 1/4 cup for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  4. Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
  5. Serve the pancakes warm with your favorite toppings such as sugar-free syrup, fresh berries, or whipped cream.
