Keto ricotta pancakes
Ingredients:
- 1 cup ricotta cheese
- 4 eggs
- 1/4 cup almond flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Sweetener of your choice (stevia, erythritol, monk fruit, etc.) to taste
- Butter or oil for cooking
Instructions:
- In a mixing bowl, combine the ricotta cheese, eggs, almond flour, baking powder, vanilla extract, and sweetener. Mix until well combined and smooth.
- Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.
- Pour the pancake batter onto the skillet, using about 1/4 cup for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
- Serve the pancakes warm with your favorite toppings such as sugar-free syrup, fresh berries, or whipped cream.
