Keto Loaded Zucchini Bake

Ingredients:

  • 4 medium-sized zucchini, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup diced cooked bacon (sugar-free)
  • 1/4 cup chopped green onions

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Place sliced zucchini in a baking dish.
  3. In a mixing bowl, combine mozzarella cheese, Parmesan cheese, cream cheese, mayonnaise, sour cream, minced garlic, oregano, basil, salt, and pepper. Mix until well combined.
  4. Spread the cheese mixture over the zucchini slices evenly.
  5. Sprinkle diced bacon over the top.
  6. Bake in the preheated oven for 25-30 minutes or until the zucchini is tender, and the cheese is melted and bubbly.
  7. Remove from the oven and sprinkle chopped green onions on top.
  8. Allow it to cool for a few minutes before serving.
