Keto Loaded Zucchini Bake
Ingredients:
- 4 medium-sized zucchini, sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup cream cheese, softened
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup diced cooked bacon (sugar-free)
- 1/4 cup chopped green onions
Instructions:
- Preheat the oven to 375°F (190°C).
- Place sliced zucchini in a baking dish.
- In a mixing bowl, combine mozzarella cheese, Parmesan cheese, cream cheese, mayonnaise, sour cream, minced garlic, oregano, basil, salt, and pepper. Mix until well combined.
- Spread the cheese mixture over the zucchini slices evenly.
- Sprinkle diced bacon over the top.
- Bake in the preheated oven for 25-30 minutes or until the zucchini is tender, and the cheese is melted and bubbly.
- Remove from the oven and sprinkle chopped green onions on top.
- Allow it to cool for a few minutes before serving.
