Keto Homemade Beef Lo Mein

Ingredients:

  • 8 oz shirataki noodles or other low-carb noodles
  • 1 lb beef sirloin, thinly sliced
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 cup broccoli florets
  • 1 bell pepper, thinly sliced
  • 1 cup snap peas, trimmed
  • 1/4 cup soy sauce or tamari (for a gluten-free option)
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon erythritol or your preferred low-carb sweetener
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions:

  1. Prepare the shirataki noodles according to the package instructions. Rinse and drain them well.
  2. In a large skillet or wok, heat sesame oil over medium-high heat.
  3. Add sliced beef to the hot skillet and cook until browned. Remove the beef from the skillet and set it aside.
  4. In the same skillet, add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
  5. Add broccoli, bell pepper, and snap peas to the skillet. Cook until the vegetables are tender-crisp.
  6. In a small bowl, mix together soy sauce (or tamari), oyster sauce, fish sauce, and erythritol to create the sauce.
  7. Return the cooked beef to the skillet and add the shirataki noodles.
  8. Pour the sauce over the beef and noodles. Toss everything together until well combined and heated through.
  9. Garnish with sliced green onions and sesame seeds.
