Keto Homemade Beef Lo Mein
Ingredients:
- 8 oz shirataki noodles or other low-carb noodles
- 1 lb beef sirloin, thinly sliced
- 2 tablespoons sesame oil
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 cup broccoli florets
- 1 bell pepper, thinly sliced
- 1 cup snap peas, trimmed
- 1/4 cup soy sauce or tamari (for a gluten-free option)
- 2 tablespoons oyster sauce
- 1 tablespoon fish sauce
- 1 tablespoon erythritol or your preferred low-carb sweetener
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions:
- Prepare the shirataki noodles according to the package instructions. Rinse and drain them well.
- In a large skillet or wok, heat sesame oil over medium-high heat.
- Add sliced beef to the hot skillet and cook until browned. Remove the beef from the skillet and set it aside.
- In the same skillet, add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
- Add broccoli, bell pepper, and snap peas to the skillet. Cook until the vegetables are tender-crisp.
- In a small bowl, mix together soy sauce (or tamari), oyster sauce, fish sauce, and erythritol to create the sauce.
- Return the cooked beef to the skillet and add the shirataki noodles.
- Pour the sauce over the beef and noodles. Toss everything together until well combined and heated through.
- Garnish with sliced green onions and sesame seeds.
