Keto Garlic Parmesan Roasted Brussels Sprouts Recipe:

Ingredients:

  • 1 lb (about 450g) Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 tablespoon fresh lemon juice (optional)
  • Chopped fresh parsley for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved Brussels sprouts with olive oil, minced garlic, grated Parmesan cheese, salt, and black pepper. Ensure the Brussels sprouts are well-coated.
  3. Spread the Brussels sprouts in a single layer on a baking sheet.
  4. Roast in the preheated oven for about 20-25 minutes or until the Brussels sprouts are golden brown and crispy on the edges. Stir halfway through to ensure even cooking.
  5. Optional: Drizzle fresh lemon juice over the roasted Brussels sprouts for added brightness.
  6. Remove from the oven and garnish with chopped fresh parsley.
