Keto Creamy Beef Taco Soup Recipe:

Ingredients:

  • 1 lb (about 450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (14 oz) beef broth
  • 1 tablespoon taco seasoning (ensure it’s low-carb or keto-friendly)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Chopped fresh cilantro and sliced jalapeños for garnish (optional)

Instructions:

  1. In a large pot, brown the ground beef over medium heat until cooked through. Drain excess fat if needed.
  2. Add diced onions and minced garlic to the pot. Sauté until the onions are translucent.
  3. Stir in diced bell pepper, diced tomatoes with green chilies, beef broth, taco seasoning, ground cumin, chili powder, paprika, salt, and black pepper. Bring to a simmer.
  4. Reduce the heat and let the soup simmer for about 15-20 minutes to allow the flavors to meld.
  5. Stir in heavy cream and shredded cheddar cheese. Continue to cook until the cheese is melted and the soup is heated through.
  6. Adjust seasoning to taste.
  7. Garnish with chopped fresh cilantro and sliced jalapeños if desired.
