Keto Creamy Beef Taco Soup Recipe:
Ingredients:
- 1 lb (about 450g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (14 oz) beef broth
- 1 tablespoon taco seasoning (ensure it’s low-carb or keto-friendly)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- Chopped fresh cilantro and sliced jalapeños for garnish (optional)
Instructions:
- In a large pot, brown the ground beef over medium heat until cooked through. Drain excess fat if needed.
- Add diced onions and minced garlic to the pot. Sauté until the onions are translucent.
- Stir in diced bell pepper, diced tomatoes with green chilies, beef broth, taco seasoning, ground cumin, chili powder, paprika, salt, and black pepper. Bring to a simmer.
- Reduce the heat and let the soup simmer for about 15-20 minutes to allow the flavors to meld.
- Stir in heavy cream and shredded cheddar cheese. Continue to cook until the cheese is melted and the soup is heated through.
- Adjust seasoning to taste.
- Garnish with chopped fresh cilantro and sliced jalapeños if desired.
