Keto chicken kabobs

Instructions:

  1. Prepare Marinade:
    • In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, ground cumin, salt, and black pepper.
  2. Marinate Chicken:
    • Place the chicken cubes in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and ensure all pieces are coated. Marinate in the refrigerator for at least 30 minutes, or longer for enhanced flavor.
  3. Preheat Grill:
    • Preheat your grill to medium-high heat.
  4. Skewer Chicken:
      • Thread the marinated chicken onto skewers, alternating with bell peppers, cherry tomatoes, and red onion if desired.
  5. Grill Kabobs:
    • Grill the chicken kabobs for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
  6. Serve:
    • Remove the kabobs from the grill and serve immediately.
