Keto Beef and Broccoli Stir Fry

Ingredients:

  • 1 lb flank steak, thinly sliced
  • 3 cups broccoli florets
  • 3 tablespoons soy sauce or tamari (for a gluten-free option)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon sesame oil
  • 1 tablespoon erythritol or your preferred low-carb sweetener
  • 1 tablespoon rice vinegar
  • 1 teaspoon xanthan gum (optional, for thickening the sauce)
  • Sesame seeds and sliced green onions for garnish (optional)

Instructions:

  1. In a bowl, marinate the sliced flank steak with soy sauce (or tamari), olive oil, minced garlic, and grated ginger. Let it marinate for at least 15-30 minutes.
  2. In a large skillet or wok, heat sesame oil over medium-high heat.
  3. Add the marinated beef to the hot skillet and cook until browned and cooked to your liking. Remove the beef from the skillet and set it aside.
  4. In the same skillet, add the broccoli and cook until it reaches your desired level of crispiness.
  5. In a small bowl, mix together erythritol, rice vinegar, and xanthan gum (if using) to create the sauce.
  6. Pour the sauce over the broccoli in the skillet and stir to coat.
  7. Return the cooked beef to the skillet and toss everything together until well combined and heated through.
  8. Garnish with sesame seeds and sliced green onions, if desired.
