Keto Beef and Broccoli Stir Fry
Ingredients:
- 1 lb flank steak, thinly sliced
- 3 cups broccoli florets
- 3 tablespoons soy sauce or tamari (for a gluten-free option)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon sesame oil
- 1 tablespoon erythritol or your preferred low-carb sweetener
- 1 tablespoon rice vinegar
- 1 teaspoon xanthan gum (optional, for thickening the sauce)
- Sesame seeds and sliced green onions for garnish (optional)
Instructions:
- In a bowl, marinate the sliced flank steak with soy sauce (or tamari), olive oil, minced garlic, and grated ginger. Let it marinate for at least 15-30 minutes.
- In a large skillet or wok, heat sesame oil over medium-high heat.
- Add the marinated beef to the hot skillet and cook until browned and cooked to your liking. Remove the beef from the skillet and set it aside.
- In the same skillet, add the broccoli and cook until it reaches your desired level of crispiness.
- In a small bowl, mix together erythritol, rice vinegar, and xanthan gum (if using) to create the sauce.
- Pour the sauce over the broccoli in the skillet and stir to coat.
- Return the cooked beef to the skillet and toss everything together until well combined and heated through.
- Garnish with sesame seeds and sliced green onions, if desired.
