Keto 6-Minute Caramel

Ingredients:

  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/2 cup powdered erythritol (or your preferred keto-friendly sweetener)
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Melt Butter:
    • In a saucepan over medium heat, melt the unsalted butter.
  2. Add Sweetener:
    • Once the butter is melted, add the powdered erythritol to the saucepan. Stir continuously to combine.
  3. Simmer:
    • Allow the mixture to simmer for about 2-3 minutes, stirring constantly. This helps the sweetener dissolve and the mixture to thicken.
    • Gradually pour in the heavy cream, continuing to stir. The mixture will thicken further as it simmer
    • Add Cream:
  4. Flavor with Vanilla and Salt:
    • Remove the saucepan from heat and stir in vanilla extract and a pinch of salt for flavor.
  5. Cool and Serve:
    • Let the caramel cool for a few minutes before serving. It will continue to thicken as it cools.
